Before wine reached northern orchards, autumn's drink was cider, and mulling it with spices goes back centuries to wassailing: singing to the orchard's health with a warm cup in hand.
You'll need:
Half a gallon of fresh apple cider
2 cinnamon sticks, 5 cloves, 1 star anise
Strips of orange peel
Bourbon or dark rum, 1.5 oz per mug
Warm the cider with the spices and peel for 20 minutes without boiling, ladle into mugs, and add the bourbon to each cup at the end so it stays warm.
