When harvest ends and the vines go dormant, winegrowers prune hard, and the cuttings, called sarments, are gathered and burned. Across Burgundy and Bordeaux the winter vineyards fill with thin columns of smoke and the smell of vine wood on cold air: the old year leaving so the new one can bud. In some villages the prunings are saved to grill over; steak au sarment is a winegrower's reward.
